Rosehip Juice

500g rosehips, 2 litres of water, 150g sugar, 3 tablespoons of honey

Boil a litre of water.  Mash hips in a food processor and add to boiling water bring to boiling point for about 10 mins.  Allow to steep for 3o mins.  Pour mixture over a sieve into a bowl and mash pulp with a rolling pin.  Boil another litre of water and add pulp and repeat process.  Add sugar and honey to drained juice and throw away the pulp.  Bring to simmer for 10 mins.  Meanwhile sterilise about 4 jars in the oven.  Add juice to clean jars and once cool keep in fridge.

Rosehips contain a lot of Vitamin C so this would be a good tonic for winter colds..add lemon juice too.   The seeds in rosehips are surrounded by tiny hairs that were originally used in itching powder so wear gloves if you wish to avoid touching the pulp.
